Chicken Lettuce Wraps

This recipe has become one of my family's favorites and I often have to double it to make sure that everyone is happy.  If there are any leftovers, a scoop of the meat atop a bed of lettuce makes a great salad the next day. CHICKEN LETTUCE WRAPS Ingredients: 1 tablespoon oil (usually olive oil, sometimes with a dash of sesame oil for flavor) 1 pound ground chicken 1/3 cup hoisin sauce 1/2 cup BBQ sauce (we prefer Sweet Baby Ray's) 2 cloves garlic 1 teaspoon fresh ... Instapot Elderberry Syrup

My littlest woke up this morning with a sore throat and stuffy nose...poor thing just started school last week and they're already sharing germs.  So I figured today would be a great time to whip up a batch of homemade elderberry syrup. Back-to-School: 2017 Edition

Is it just me, or has this summer really flown by?  When my kids were babies and needed constant care and attention, I came across this parenting quote which spoke volumes to me then. "The days are LONG, but the years are SHORT” - Gretchen Rubin Now that they're older it seems like both the days and years go by ever quicker!  Today the kiddos had their first day back-to-school. How is it that I now have a 2nd and a 4th grader? I'll admit that school supply shopping makes this OCD, ... View Post

Tech Pretties

I’m a big fan of things that are both functional and pretty.  And all day long, I’m using some form technology – either my desktop, laptop or phone, but a little like having fresh flowers in the house, pretty things make the task a little more enjoyable. One of the things I look forward to each month is updating my computer wallpaper background. There are quite a few graphic designers that offer these free for download. For the month of August, these are some of my favorites: Kelly Sugar ... View Post
