This recipe has become one of my family’s favorites and I often have to double it to make sure that everyone is happy. If there are any leftovers, a scoop of the meat atop a bed of lettuce makes a great salad the next day.
CHICKEN LETTUCE WRAPS
Ingredients:
- 1 tablespoon oil (usually olive oil, sometimes with a dash of sesame oil for flavor)
- 1 pound ground chicken
- 1/3 cup hoisin sauce
- 1/2 cup BBQ sauce (we prefer Sweet Baby Ray’s)
- 2 cloves garlic
- 1 teaspoon fresh grated ginger
- 1/3 cup pine nuts
- green onions for garnish
- 1 head of butter lettuce
Directions:
- Saute ground chicken and garlic in oil.
- While chicken is cooking, mix sauce using hoisin, BBQ sauce and ginger.
- When chicken cooked through, drain off excess water.
- Add sauce and mix.
- Add pine nuts, green onions and serve with lettuce cups.
