Chicken Lettuce Wraps

This recipe has become one of my family’s favorites and I often have to double it to make sure that everyone is happy.  If there are any leftovers, a scoop of the meat atop a bed of lettuce makes a great salad the next day.

CHICKEN LETTUCE WRAPS

Ingredients:

  • 1 tablespoon oil (usually olive oil, sometimes with a dash of sesame oil for flavor)
  • 1 pound ground chicken
  • 1/3 cup hoisin sauce
  • 1/2 cup BBQ sauce (we prefer Sweet Baby Ray’s)
  • 2 cloves garlic
  • 1 teaspoon fresh grated ginger
  • 1/3 cup pine nuts
  • green onions for garnish
  • 1 head of butter lettuce

Directions:

  1. Saute ground chicken and garlic in oil.
  2. While chicken is cooking, mix sauce using hoisin, BBQ sauce and ginger.
  3. When chicken cooked through, drain off excess water.
  4. Add sauce and mix.
  5. Add pine nuts, green onions and serve with lettuce cups.
